Sicilian Pork Pie
➔To Make 1 pizza sized pie (12 inches round), you will need 2 loaves frozen
dough, one for top crust, one for bottom. Prepare dough to first rising. Roll out
1 loaf and stretch dough onto greased pan, going a bit beyond rim of pan with dough.
Spread prepared filling in pan and top with second loaf of dough. Make sure edge of
pie (rim) is sealed securely. Make slits in top crust so steam can escape.
Filling:
1 ½ lb Italian Sausage
1 pkg Frozen Cauliflower, cooked and drained
1 medium onion, sliced
1 (16-18 oz) can Whole Tomatoes
¼ lb Provolone Cheese, cut into small pieces
➔Remove sausage from the links and mix with the cut cauliflower, sliced onion,
drained and mashed tomatoes and cut cheese (can be mixed by hand). Bake in 350F oven
for 35 minutes, or until nicely browned. Dough will puff up a bit (like a thick
pizza). If too much fat bubbles up on top of pie during baking, take absorbent paper
towel and “mop off” top of pie. Let stand for 20 minutes or so to cut easily.
